Baked Fish with Tomatoes Recipe Preparation



Preparation

Wash and dry the fish. With a sharp knife make incisions over the top of the fish; rub with lemon juice and salt. Place peeled potatoes on the inside of the fish.

Wrap the fish in bacon slices and place in a baking pan. Bake for 10 minutes.

Meanwhile, peel the tomatoes and cut in four. Mince the onions and soak in olive oil. Add both vegetables to the pan and pour some broth around the fish.

Place back in the oven for 20 minutes, bathing with broth every couple minutes.

When the fish is ready, empty the pan broth into a small pot, thicken with cornstarch dissolved in some milk. Add the cream cheese and mix well.

Serve the fish covered in the sauce. Decorate with basil leaves.

1.5 kg whole clean fish (sole, hake, flounder, etc)

½ lemon (juice)

Salt

1 large potato

100 gr smoked bacon

8 tomatoes

1 large minced onion

1 cup broth

1 tbspn cornstarch

2 tbspn cream cheese

Fresh basil
