Beef rolled in Pepper and Leek Recipe Preparation
Preparation
Season the beef with salt, pepper and minced parsley. Set aside. Heat the butter and 2 tablespoons of olive oil and sauté the leeks. Place the cheese over the meat and sprinkle over the leek. Roll them up and secure with toothpicks. Sauté in 3 tablespoons of olive oil and set aside. Wash and cut the green and red bell pepper. Sauté in 3 tablespoons of olive oil. Season with salt and pepper. Add the broth, white wine, soy sauce and laurel. Place the rolls over the peppers; cover and cook until the meat is ready. Serve the rolled meat over the peppers and decorate with fresh basil.
