Gizzards with Mushroom Sauce Recipe Preparation



Preparation

Soak gizzards for 2 hours, changing water several times. Cook them in 2 liters of water, with vinegar and salt at low heat for 15 minutes. Strain immediately in cold water. Take the thin skin which covers them. Cut in small pieces.

Heat the butter and oil in a pan. Sauté the spring onions; add the gizzards and mushrooms and cook for a few more minutes.

Include the broth and season with rosemary. Cook for 15 more minutes.

Dissolve the cornstarch in cold water, add to the sauce and let it thicken.

Sprinkle with parsley. Serve hot and accompanied by steamed carrots and white rice.

1 tspn salt

2 tbspn butter

1 tbspn oil

1 cup minced spring onions

250 gr sliced mushrooms

1 cup broth

1 tbson dry rosemary

1 tbson cornstarch
