Mussel Gratiné Recipe Preparation
Preparation
Scrape and clean the mussels. Place in a large pan and cover with water.
Heat until the water is warm and the mussels open. Throw away the ones that don’t open. Keep the boiled water.
Separate the open shells without mussel meat and keep the ones that have a filling.
Mix the garlic cloves with the minced parsley, grated cheese and breadcrumbs. Place one teaspoon of the mix over each mussel.
Place the mussels over a baking pan, sprinkle with melted butter or olive oil, season with pepper and pour in 1 ladle of the mussel cooking broth.
Gratiné the mussels in the oven for a few minutes. Serve over steamed spinach seasoned with salt, lemon and olive oil.
