Orange Gizzards Recipe Preparation
Preparation Clean out the gizzards. Place in a deep bowl, cover with water and soak them over night in the fridge.In a large pot, mix the water, milk and laurel. Once it boils include the gizzards for 5 minutes and take them back out once it begins boiling again. Pass to a bowl with water and ice. Drain and remove the thin skin hat covers them. Place a heavy object over them and let them stay pressed for 1 hour. Then fillet them and pass the through flour. Heat the butter and oil in a pan and fry the gizzards on both sides until they are golden. Flambé with liquor. Sprinkle with honey and cook until they caramel. Add the grated orange peel, juice and broth. Serve the gizzards in its gravy, accompanied with sautéed vegetables and spinach leaves.
