Pork with Apples Recipe Preparation



Preparation

Clean the bondiola and tie it to keep its original form.

Marinade: place all the ingredients in a bowl. Mix in the bondiola and let it sit for 2 hours. Drain the pork and save the marinade. Season the pork, sear in a pan with little oil and finish the cooking in the oven for approximately 30 minutes.

Sauce: peel the apples and dice. Place in a pan with butter, powder with sugar and cook until they soften. Include half the marinade, straining it well. Cook until the apples dissolve and the sauce thickens.

Side dish: slice the carrots and sweet potatoes. Sauté the asparagus and carrots, season with salt, pepper and olive oil.

Fry the sweet potatoes in abundant oil and strain over paper towels.

Serve the pork covered with the sauce, accompanied by asparagus, carrots and sweet potatoes.

1 pork bondiola

Salt, pepper and oil

Marinade

3 tbspn fresh herbs

˝ cup apple vinegar

˝ cup wine

1 tbspn rock salt

Black pepper

Sauce

400 gr apples

30 gr butter

30 gr sugar

4 carrots

2 sweet potatoes

1 asparagus bushel

Oil and olive oil
