Rib Eye with Spring Onions Sauce Recipe Preparation
Preparation Preheat the oven to 250C. Sprinkle the rib eye with salt and pepper. Set aside. Slice the garlic cloves and mix with the olive oil and rub in the mix to the rib eye. Wrap the meat in aluminum foil and place in a baking pan. Put in the oven and cook for 15 minutes at high temperature. Then lower the heat and cook until the meat is ready. Once ready, turn off the oven and let it sit for 20 minutes. When it cools, slice the rib eye in thin slices. Sauce: Mash the egg yolks. Mix with the Dijon mustard, salt, pepper and the needed amount of olive oil to form a smooth sauce. Add the spring onions. Serve the meat covered in the spring onion sauce.
