Breakfast Casserole

4 slices of bacon8 green onions (scallions)1 tablespoon butter1 pound sliced mushrooms8 eggs1 cup of milk 1/8 teaspoon of pepper2 ½ cups of shredded cheddar cheese

In a large heavy skillet cook bacon until crisp. Drain off fat and crumble.

Wipe pan clean. Cook scallions in butter over medium heat for a few minutes. Add mushrooms and cook for a few minutes more.

Remove from heat.

In a bowl beat together the eggs, milk and pepper. Stir in the cheese and the mushroom mix.Pour into a greased baking dish.Bake for 30 to 45 minutes at 350 degrees or until puffed and knife comes out clean.

Serves six.

Baked Egg Casserole

10 eggs, beaten¼ pound sliced mushrooms½ cup chopped onions4 slices diced raw bacon¼ pound shredded cheese

Combine and pour into greased 8X10 casserole dish.Bake for 30 minutes at 350 degrees

Cinnamon Raisin French Toast Soufflé

1 large loaf Cinnamon Raisin Bread (chopped)12 Cream Cheese softened6 ounces of butter, softened¾ cup Maple syrup (divided)10 eggs3 cups of half and halfCinnamon sugarButtered Maple syrup (mix 50/50 butter and Maple syrup)

Place chopped cinnamon raisin bread in a well buttered 9 x 13 glass bowl. Mix cream cheese, butter and ¼ cup maple syrup until smooth. Spread on top of bread, leaving some openings through which to pour the eggs mixture. Beat eggs, half and half and ½ cup maple syrup. Pour over bread and sprinkle with cinnamon sugar.Cover and refrigerate overnight.Uncover and bake at 350 degrees for 50 minutes to an hour.Cut into squads and sprinkle with powdered sugar.

Serves 8 to 12.

Sweet Potato Pie

4 medium sweet potatoes2 eggs1 cup sugar1 teaspoon vanillaPinch of salt ¼ teaspoon of nutmeg1 stick of butter ½ cup evaporated milk1 unbaked pie crust

Boil sweet potatoes until they are soft, peel and beat until no lumps. Add remainder of ingredients, beat until creamy.

Pour into pie shell and bake until crust is brown at 350 degrees.

Hearty Breakfast

6 baked or micro waved potatoes, skinned and diced1 green pepper1 small onion16 ounces of bacon8 ounces of cheddar cheese grated8 eggs

Cook potatoes and bacon, dice pepper and onion.

Coat bottom of large skillet with bacon grease, cook pepper, potatoes and onion until brown on one side and then turn, salt and pepper to taste add bacon grease as needed.

Crack eggs over and cover skillet. Cook eggs until set. Top with bacon. Top with cheese and let melt.

Crisp Oven Browned Potatoes

6 to 8 raw potatoes, peeled and sliced in rounds1 cup melted butterSalt and pepper

Heat oven to 350 degrees. Put sliced potatoes in ungreased, shallow 13 x 18 pan. Sprinkle with salt and pepper to taste. Drizzle melted butter over potatoes. Bake for an hour at 350 degrees until tender and brown. Baste occasionally with the butter from the pan.

Baked Oatmeal

2 cups oatmeal2 cups of milk4 eggs¼ cup of oil½ cup brown sugar1 tablespoon baking powder1 teaspoon of saltNuts, dried fruit and cinnamon to taste

Mix everything together in a bowl, spray a casserole dish with oil spray and pour mix in the bowl. It will be very soupy. Refrigerate overnight. Bake for about an hour at 350 degrees.
