Vegetable Casseroles
Vegetable casseroles make great side dishes and accompaniments to any main course.*Vegetable Casseroles Recipe 1 Squash Casserole Two cups cooked mashed yellow squashOne cup bread crumbsThree tablespoons butter, meltedOne cup milkTwo eggs, lightly beatenSalt and Pepper Combine melted butter and milk; add seasonings with crumbs. Add this mixture squash; fold in lightly beaten eggs. Put in greased casserole and top with butter crumbs. Bake about 30 minutes at 350 degrees. Even if you don't like squash...this is one of my favorite vegetable casseroles.
*Vegetable Casseroles Recipe 2Corn Pudding Casserole One 15 oz. can corn, cream styleOne can milk, measured in the corn canThree eggsThree tablespoons sugarTwo tablespoons butterSalt and pepper Combine all ingredients; beat well with mixer. Place in a greased casserole and bake at 350 degrees until almost done, about 30-40 minutes; increase heat to 450 degrees to brown. Don?t cook too fast or pudding will separate when spooned. *Vegetable Casseroles Recipe 3 String Bean Supreme Two 15 oz. cans French-styled string beansOne small can button mushroomsOne can cream of celery soup½ cup cheddar cheese, shredded Mix and turn into greased casserole. Cook in 350 degree oven for 30 minutes. * Vegetable Casseroles Recipe 4 String Bean Casserole 2 Two #2 cans whole string beansJuice from one can beansOne can cream of mushroom soupOne can French fried onion rings3 ½ ounce package slivered almonds1/4 can sherry (optional) Arrange drained string beans evenly in 10 x 10-inch casserole. Stir the juice from 1 can, sherry and almonds into the mushroom soup and pour over the beans. Arrange onion rings on top and place in a pre-heated 350 degree oven for about 20 minutes, or until onions are golden and crisp. * Vegetable Casseroles Recipe 5 Carrot Casserole *One cup carrots, cooked and mashed*One cup grated sharp cheddar cheese*One cup bread crumbsOne egg½ cup milkSalt and Pepper Mix all ingredients together. Bake in a greased casserole for 30 minutes at 300 degrees. Vegetable casseroles are fancy enough to have for holidays and easy enough to serve anytime. Vegetable casseroles are also great for getting little ones to love their veggies.
